Why is it so delicious that it is included in the list of poisonous mushrooms? Since it's poisonous, why are they still eating it for generations?

Why is it so delicious that it is included in the list of poisonous mushrooms ?

At present, there are few studies on the chemical constituents of boletus(jianshouqing), but we can still infer which boletus are toxic from the cases of poisoning by eating poisonous mushrooms in Yunnan every year.

It is understood that researchers have systematically analyzed 223 poisoning incidents in Yunnan that have carried out scientific species identification since 2013, and found 47 kinds of poisonous mushrooms, including 6 kinds of boletus. They are Baorangia pseudocalopus, Baorangia major, Boletellus indistinctus, Neoboletus venenatus, Rubroboletus sinicus, and Lanmaoa asiatica. The poisoning type of the top five is gastroenteritis, while Lanmaoa asiatica, which is commonly known as "dacong", often leads to neuropsychiatric poisoning. The common manifestations are that there seem to be little people dancing around the eyes and colorful mushrooms spinning, which can lead to hallucinations in severe cases, such as dreaming that there are fires everywhere in the house, and watering the fire with a basin, etc., and most of them are hallucinations, mainly caused by toxins and nerve injuries; Otherwise, I am sleepy, feel heavy at the end, my eyes are unbearable, and I am sleepy.

In the boletus ranking leading to gastroenteritis poisoning, the new boletus is the first to be poisoned. Its toxicity may come from the toxic protein bolevenine in its body, and it is similar to the toxic protein bolesatine of Rubroboletus satanas(a kind of jianshouqing), which is also life-threatening from Europe. Gastroenteritis poisoning can lead to serious gastrointestinal discomfort and dehydration, and serious poisoning may be life-threatening.

Since it's poisonous, why are they still eating it for generations?

For lurid bolete (jianshouqing), we can understand it as delicious like pufferfish. Everyone knows that it is toxic and not small in toxicity, but as long as you handle it properly, you can avoid pufferfish toxin poisoning.
Jianshouqing poisoning is mainly caused by people's careless cooking (undercooked or cold eating overnight).
Secondly, boletus is a common fungus in Yunnan and is usually marketed during the rainy season. In the wild mushroom market in Yunnan, the price is much cheaper than that of matsutake, dry mushroom, and chicken fir mushroom, and more expensive than that of aeruginosa, because it is generally believed that the taste of fresh mushrooms is better than that of copper green mushroom, which also varies from person to person.
Finally, Boletus edulis has a delicious taste and is rich in nutrients. This mushroom has a large body, thick meat, thick stems, a sweet and delicious taste, and is rich in nutrients. It is a world-renowned edible mushroom.
Western European countries also have a widespread habit of consuming white boletus mushrooms. In addition to fresh dishes, most of them are sliced and dried, processed into various small packages, used to prepare soups or make soy sauce extracts, and also made into salt pickled products for consumption.
