Description
Glycyrrhizic acid, also known as glycyrrhizin, is a glycoside composed of glycyrrhetinic acid and 2 molecules of glucuronic acid. High-quality Glycyrrhizic acid powder is white to yellowish crystal, odorless, with special sweetness, which is about 200 times as sweet as sucrose. Moreover, in taste, the sweetness of this product is different from that of sweeteners such as sucrose. It takes a while to get a sweet feeling after eating, but it lasts for a long time. A small amount of liquiritin combined with sucrose can use 20% less sucrose while keeping the sweetness unchanged. Although it has no fragrance, it has the effect of enhancing fragrance. The aqueous solution is weakly acidic, and the pH value of 2% solution is 2.5~3.5. Insoluble in water and dilute ethanol. Soluble in hot water, it is viscous jelly after cooling.
