Caprylhydroxamic Acid (CHA) has a strong inhibitory effect on fungi, and its inhibitory principle is that CHA has a highly selective chelating effect on Fe2+ and Fe3+. In an iron-restricted environment, mold growth is limited. Iron is a key element for microbial growth, and microbial releasing chelators (siderophores) trap Fe3+ from the environment and convert it to Fe2+. CHA chelating Fe3+ has a high stability constant, which can prevent mold from obtaining iron, and it is still effective at a neutral pH value, so it is an ideal organic acid for inhibiting bacteria.
