What is Papain?

Papain is a kind of protease that can decompose proteins in acidic, neutral and alkaline environments. Its appearance is a white to light yellow powder with slight moisture absorption; Papain is soluble in water and glycerin, and the aqueous solution is colorless or light yellow, sometimes milky white; Almost insoluble in organic solvents such as ethanol, chloroform, and ether. Papain is a sulfhydryl (- SH) - containing peptide chain Endonuclease, which has protease and esterase activities, has a wide range of specificity, and has strong hydrolysis ability to animal and plant proteins, peptides, esters, amides, etc., but can hardly decompose peptone.
Papain is most suitable for pH value of 6~7 (generally 3~9.5), and also has effect when it is neutral or slightly acidic, with Isoelectric point (pI) of 8.75; The most suitable temperature for Papain is 55~65 ℃ (generally 10~85 ℃). It has strong heat resistance and will not be completely inactivated at 90 ℃; Inhibited by oxidants, activated by reducing substances.
