Invertase powder is also known as sucrase. Enzymes that catalyze the hydrolysis of sucrose. It is named so because the β -furan glycosidic bond or α -pyran glucosidic bond in the sucrose molecule is hydrolyzed to produce an equal mixture of glucose and fructose, converting the optical activity from right-handed to left-handed. Invertase is widely present in the digestive juices of plants, microorganisms and animals. Plant-derived invertase acts on the fructosyl part of sucrose molecules, catalyzing the hydrolysis of β -furan fructosidic bonds and belongs to the β -fructosidase type.

Invertase powder plays an important role in sucrose metabolism. The physiological effects of invertase isozymes are complex and vary depending on their tissue, cell, and subcellular localization.

2) Cell wall invertase plays an important role in the transport of photosynthetic products by maintaining the sucrose concentration gradient between sucrose and sink tissues.
3) Invertase plays a role in the accumulation of sucrose in the vacuole of mature sink organs.
4) Invertase may regulate intracellular hexose levels by controlling their accumulation levels.
5) Invertase may play a role in pathogen control mechanisms. Many studies have found that invertase activity increases after plants are subjected to some abiotic and biotic stresses (such as damage, cold, heat, water stress, and pathogen infection).
